Ingredients
6 rump steaks, 6mm thick, schnitzel style, 100g per portion
6 thin slices ham
0.5 cup drained crushed pineapple
1 cup shredded tasty cheddar
0.5 cup flour
2 eggs, beaten
1 cup dried breadcrumbs
Method
- Flatten one side of beef with meat mallet. Top one half of each slice with 20g each of ham, cheese and pineapple. Fold over and flatten edges with meat mallet to enclose filling
- Coat lightly in flour , dip into beaten egg, drain and then dip into breadcrumbs, pressing crumbs on firmly
- Heat 20 ml oil in large frying pan over moderate heat. Cook Beef for 3 minutes on each side until crumbs are brown and crispy

- Serve with salad or steamed vegetables
