Australian beef and lamb kofta skewers

Ingredients
1kg minced Australian beef
1kg minced Australian lamb
Onion juice:
• Onion x 2 |
• Kitchen towel/ cloth for squeezing / filtering |
16 fresh pita bread
(whole wheat or small Lebanese style)
Hummus
Tahini
2 Onions
3 Tomatoes
Fresh coriander
Method
- Dice and then grind 2 onions in a blender lightly to release the onion juice.
- Place a kitchen towel or cloth over a big bowl and place the crushed onions with its water on the centre of the towel, close it up bringing each end to the centre, then squeeze all that onion juice into the big bowl.
- Using another big bowl, mix your minced beef and minced lamb together completely using your hands.
- Season with salt and pepper, then take handful chunk of kofta meat, and start forming it around your skewers
- Dip your hand in the onion water as you form the kofta on the skewer for more flavour and solidity
- Place your kofta skewers on the hot grill turning them every 2 minutes, for 15 minutes.
- As the kofta is cooking, prepare your salad. Thinly slice your remaining onions and dice your tomatoes, mixing them together and adding fresh coriander.
- Spread the hummus on your pita bread, add the kofta to the centre of the bread, drizzle your tahini, and finally, add a tablespoon of your salad on top of the kofta, then enjoy!
