Australian flat iron steak shawarma

Ingredients
500g flat iron steak (thinly sliced)
5-6 tbsp hummus
3-4 tbsp tahini
1 Large red onion, thinly sliced
1 Large tomato, cut to cubes
Pinch of finely chopped parsley
Arabic style pickles
Saj Bread (one sheet per shawarma)
Salt to taste
Method
- Place the thinly sliced flat iron steak on a hot grill and season with salt.
- Sear each side of the meat until it starts to colour and caramelize. This should only take a minute or two each side as the meat is so thinly sliced.
- Take the meat off direct heat, and then cover with the lid and cook low and slow for around 10 minutes until deliciously tender.
- Prepare a sheet of the saj bread by spreading 1 tbsp of hummus and 2 tbsp tahini first, and then placing the thinly sliced red onion, tomato, parsley and pickles on the bread.
- Then take the tender Flat Iron Steak off the grill and add to the prepared saj bread.
- Fold over the bottom longest edge first, then the sides and finally roll the saj bread and enjoy!
